Egg Hunts

Just for The Flying Mum



It is hilarious to me how I have never met most of you wonderful siestas yet I think about you throughout my week. This week I had Sunni on my mind because of all of the wonderful dinners and desserts I have had because of her blog. Being pregnant hasn't helped!! As soon as she posts something delicious I automatically am craving it until it is made. So far I have made her potatoes, chocolate brownie pie, and BBQ muffin cups. Sunni this one is for you!!

Huevos Rancheros with Zucchini and Green Pepper- Cooking Light

1 tsp olive oil
1 1/2 C diced zucchini
1/2 C diced green bell pepper
1/4 C water
1/4 tsp salt
1/4 tsp ground cumin
1/8 tsp black pepper
(just so you know all of the seasoning I did to taste because we like it flavorful)
1 10oz can diced tomatoes with green chiles, undrained
4 6in. corn tortillas (soft or hard work fine)
4 large eggs
1/3 C Cheddar chz
2 tsp fresh cilantro

Saute zucchini and bell pepper for 6 minutes in evoo
add water and next four ingredients(through tomatoes) Cover and simmer

Warm tortillas

Cook your eggs so that they are poached style similar to Eggs benedict

Slip eggs on top of tomato mixture sprinkle with cheese and cover until melted

Place a tortilla on your plate and spoon egg and tomato mixture on top
Sprinkle with fresh cilantro

I served this dinner with a side of mexican rice and of course topped it with Sour cream, salsa and the best, Tabasco green!

Beautiful Easter Weekend

Before we left Saturday for an Easter Egg Hunt with our great friends

My handsome boy!! You can't see them in this photo but I was so excited about his shoes. I went to a Consignment sale and found brown leather sandals from Stride Rite(maybe worn once) for $5. After I upload some more photos I will post. Hope you all had a wonderful time with family and friends. We did and feel so blessed to have such a strong support all around us that Love Jesus and us so much.

The Quiet

I sit here this morning in silence. My children are gone, my husband's at work and it is so quiet. Let me be a little more specific about the quiet, what I hear is quiet, but my mind is very busy. I have been by myself since about 4:15 yesterday and it is taking quite sometime to get my mind to receive the rest and quiet that this break is sure to give. I find first of all a list of things that I could do without kids. Like every mom, first on that list is cleaning uninterrupted. The beautiful way my house could look for more then 8 hours, the crumbs eliminated from my feet, the bath toys out of the sink, the toothpaste off of the counter, the dirty diaper finally in a grocery sack, the shoes in the closet, oh my! the list can go on and on. How do I not do anything and not feel bad???
My husband told me, enjoy the day, rest , do what you want to do and I will see you tonight. This of course was said with a smile that leads me to believe that I should be prepared for that wonderful Marriage ministry.
Overall I am battling feeling guilty for not doing what I think should be done here at the house with hours free from children and a schedule. If you know me I have been home more and today I was just going to be home doing chores and loving on my kids. I guess it really causes me to examine who I am when I am alone. Part of me wants to just go be with somebody else or be BUSY so that I don't listen to what is on the inside. Another part of me is confident that when I get alone and especially in His presence, I am satisfied more then any friend or shopping spree could provide. As I think about it I really love good music and it changes my whole perspective every time I listen and allow the words to effect me. Siesta's I believe I have found my way!! I am going to go listen and worship the Most Holy God and have an absolutely wonderful day.

Evan's box for his Birthday!

He has a great appreciation for cards. He received quite a few for his birthday and he loves the trains, cakes, fire engines etc that are on each of them.

Aunt Dawn and Uncle Tony sent Evan a box full of goodies. He and his sister loved it all!
